The quality of chitosan mainly depends on the degree of deacetylation and viscosity. Deacetylation degree is 85 percent , the relative molecular weight and its viscosity determine the product quality. The higher the degree of deacetylation, the lower the relative molecular weight, the more soluble in water; The lower the degree of deacetylation, the greater the molecular weight, the greater the viscosity.
